I understand how you change the background color on a document from white to whatever, but how do you make the new choice the default? The color goes away when you log out and back in.

You could play around with the following: Page Layout > Page Setup (the little arrow) > Layout > Borders > Shading. This will allow you to choose a color behind your text.
