Are those original Xbox consoles, or the new Xbox 360? Either way, the usual method is to use a memory unit. Transfer data from the first console onto the MU, then transfer the data from the MU to the second console.

As for an ethernet cable transfer, I don't know how to do that either. Both consoles have an ethernet jack, but there is no built-in software for transferring files over it. I think the folks who do this have modded Xbox consoles that will boot non-Microsoft discs allowing them to run other software. That voids the warranty, but an original Xbox console won't be under warranty anyway. I have heard about, but never used, XBMC software that will run on modded Xbox consoles for media playback, streaming, and it may also do file transfer:
