I'm at a loss. I've always stacked signature blocks and that feature makes for a wonderful mechanism for document assembly in email construction.

Now, though, Outlook 2007 prevents that by REPLACING any signature with that "convenient" right-click, replace signature feature.

Anyone know how to turn that off?

I'm not sure that you can stack signatures in Outlook 2007... what I'd do is use the Quick Parts feature:
