Server2008R2 Terminal Server VM Setup

Hello,
We are migrating to a VMware virtual environment. I am getting ready to configure a new 2008R2 Terminal server and was curious what would be the optimal setup for best performance (RAM, CPUs, etc...). I have 2 remote offices that will need to launch our ERP software. I have all three locations connected via a MPLS (1.5MB between each site)

The hardware is a Cisco UCS C210, 96GB RAM, Intel Xeon E5649 2.53GHz /6c/80W/12MB cache/DDR3 1333MHz.

Also forgot to mention how many Virtual sockets and Cores per Virtual Socket is recommended.
