Outlook 2010 - how to populate a custom field

I'd like to organize my emails by a custom field. I have created one called "Projects" so I can group related emails with different subjects.
But I don't understand how to enter data into the custom field.
I created it as text.

Can you help or point me to documentation? I have How-To Geek without success.
