How to display Chinese properly in the .txt file?

hi, I recently changed the system from window to Ubuntu and can type and read Chinese, however, all the Chinese in the .txt files are mess-up but those in .doc are fine, why? How can I restore/ display the Chinese properly in .txt? Tks!
