I don't know how to edit a document from my scanner. Help please?

Documents from a scanner are normally saved as image files, not as text files.
So you can't edit them as text files.
However there are softwares that dó edit textfiles from a scanner.
Mostly expensive and not easy to work with. (I know, I tried in the past, but gave up - retyping the text was a lot faster)
