How can I adjust the setting of the monitor shutting off after a period of inactivity in Ubuntu 12.10? Can this setting be changed while running the LiveDVD's "Try Ubuntu" feature, or would there be nowhere to write the data for the new setting to?

Go to system settings. Go to brightness & lock. Set it to the setting you desire. You can set it on a Live CD/DVD/USB session I believe, however all settings will be lost upon reboot.
