Sounds fine, you can get iWork instead (it's compatible with office documents, but you can get MS Office as well, I assume that's for the Windows you're planning to install via Boot Camp, or you can get Office for Mac as well). Getting a laptop skin is a good idea, protecting it from stuff. I believe you'll be hooking it up to a larger display (for movies/multimedia?), since you're also getting the VGA dongle and a remote? The setup sounds good, overall :)

No idea regarding a cheap version of Windows 7 (I'd suggest you to wait till Windows 8 comes it).
