We run six laptops, that we generally have issues backing up, due to the remote nature of the workers.

They could VPN in obviously, but that is quite slow!

I was thinking that the next time they are in, I could back-up to the server (Win 2K btw), then just use a string to say anything modified or created since last back-up then gets backup'd down the VPN.

I have tried using xcopy but really can't remember the best way to do it.

Any other methods, pref. free that I could try out?

One of my favorite is www.robotask.com

The robotask is not free, however there is a free 'lite' version called 'carbon folder' in the download area; only 0.5mb download. I think you'll love it
When you install carbon folder, you also get robocopy, a command line tool much more powerful than xcopy
