The interesting part of the story is that there is a "Cafe House School" in Vienna where they teach that. Vienna is probably the number one city for cafes with the famous Cafe Demel http://www.vienna-life.com/dri.....ls/8-Demel or Cafe Sacher http://www.sacher.com/en-cafe-sacher-vienna.htm and others. Their tradition goes back several hundred years. When I lived in Vienna, the first thing about coffee that I had to learn was all the names they have for coffee - there are more than a dozen common ones plus some more uncommon. If you just order a "coffee", they say you get the overflow of the espresso machine. Btw - all coffees in Austria are made with espresso machines. Takes the acid out.

I only drink coffee from my espresso machine these days... especially ever since my good friend Scott showed me how great freshly ground coffee can be.

That said, I can not possibly imagine how they make those designs... fascinating!
