Sous vide, for the unfamiliar, is a process of cooking food in water at precisely controlled temperatures. For example, you can cook a steak by putting it in a vacuum-sealed plastic bag and then cooking it to the exact temperature you want. You’ll never have an undercooked or overcooked steak again.
